Upgrade MongoDB Driver Dependencies

Changes:

• upgrades connect-mongo to v3.2.0 and mongoose to v6.13.0, update relevant files to new syntax
• removes mockingoose, which has not been updated in a while
• refactors apiCreateProject() to async/await syntax and updates createProject test

I have verified that this pull request:
