I noticed that Vite watch all the project files including the files in .gitignore, give user options for what to be watch or just ignore the files listed in .gitignore would be helpful.

I don't think that we should override the meaning of .gitignore.

The config you are looking for is already available. Check out https://vitejs.dev/config/#server-watch
