Ability to @mention

Is your feature request related to a problem? Please describe.
I would like to be able to @mention people in chat. This may be overkill for a drop in solution but would be very nice to have.

When '@' is typed to prompt a list (can be provided to dash chat constructor) of Chat Users and as more letters are typed filter by the display name. Also make these names clickable in chat and bolded.

@emmett-deen Great idea, I think this would be a great package on its own maybe something like react-mentions and this would also work great with flutter_parsed_text.

I will work on this when I get some free time.

Just finished a package flutter_mentions will integrate with dash_chat when I get some free time.
